Moreno Cedroni

Born in Ancona in 1964, Moreno Cedroni is considered to be one of Italy's most innovative chefs. In 1984 he bought
La Madonnina del Pescatore in Senigallia and in 1992 decided to give a boost to his gastronomic offering, taking inspiration
from teaching given by Ferràn Adrià. It is Moreno Cedroni we have to thank for the Italianisation of sushi, which he offers
at his Clandestino Susci Bar in Portonovo in 2000 (followed by the Anikò kiosk in Senigallia, and the Officina workshop
and the Acrilico wine bar in Ancona) and describes in his 2001 book Sushi & Susci. Since 1996 he has won all of the
most important awards (Michelin Star, Veronelli Sun and Gambero Rosso Three Forks). Deeply knowledgeable about
techniques for cooking fish, this eclectic chef and fearless experimenter was chosen by Scholtès as the perfect creator
of projects that combine cooking with art.
